Château Cheval Blanc
At the summit of the Saint-Emilion appellation, Cheval Blanc, almost unchanged since 19th century, comprises 39ha and covers a mosaic of terroirs.
Their new futuristic winery, opened in 2011 and designed by architect Christian de Portzamparc, is equipped for single-parcel vinifications of each of their 45 different parcels. The team gathers three times a week between January and February to work on the assemblages, without the assistance of an outside consultant.
The blend is blend cabernet franc and merlot, with the former marginally dominating, a trademark of Cheval Blanc.
