Guardian of a property steeped in history, Olivier Bernard is today focussed on the transmission to his sons of the values that he holds so dear: respect for the family, nature and the terroir.
"To get the best from a terroir, you need to have intimate knowledge of it", states Olivier, who likes to remind us, in all humility, that "man does no more than reveal what is there. The terroir is everything ...". At Chevalier, it is precisely thanks to the knowledge of the terroir's identity, with its meagre, complex soils, and the singularity of its environment, that the Bernard family continue their actions in favour of excellence - conversion to biodynamics, control of hydromorphism.
