"To get the best from a terroir, you need to have intimate knowledge of it", states Olivier, who likes to remind us, in all humility, that "man does no more than reveal what is there. At Chevalier, it is precisely thanks to the knowledge of the terroir's identity, with its meagre, complex soils, and the singularity of its environment, that the Bernard family continue their actions in favour of excellence - conversion to biodynamics, control of hydromorphism.
